We got Michael's mom on the plane early in the morning and she made it safely to California yesterday. The whole experience was rather trying! We spent the rest of yesterday just laying around.

I did venture out to a local chicken place to buy an Amish raised chicken for dinner. People have been telling me that the chickens are very good and taste lots better than grocery store chickens. They are free range, drug free, and fed a vegetarian diet. They are never frozen. Surprizingly, they don't cost that much more than chickens from a grocery store. I paid $1.37 per pound for a small fryer and $3.50 for boneless breasts.

I followed a simple recipe and it was delicious!

Here's the recipe: Turn oven to 425 degrees and place a cast iron skilet (I used a cast iron casserole dish) in the oven with a 1/4 inch of oil. Place chicken breast side down and use poultry shears to completely remove the backbone. Season with salt and pepper. Place chicken, breast side down in the HOT cast iron pan, in butterfly position. Cook 20 minutes. (I loosened the chicken so it didn't stick partway though the cooking process). After 20 minutes, turn it over and cook 15 minutes. Very simple and very good!!

Today I'm going to the gym and then to the Wexner Center to see an exhibit. I should get some good steps in today!
